Skillet Macaroni and Cheese



I tried this macaroni and cheese for the first time tonight and it was to die for! (and super easy)

Ingredients:

2 cups uncooked GF pasta (1 bag)
2 Tablespoons butter
2 Tablespoons GF all-purpose flour (I use Pamela's Ultimate Baking and Pancake Mix)
1 1/2 cups half and half cream
3/4 pound processed cheese (Velveeta), cubed
pepper to taste

Directions:

1. Cook macaroni according to the package directions.
2. Meanwhile, in a large nonstick skillet, melt butter over medium heat. Stir in flour until smooth.
3. Gradually add cream; bring to a boil. Cook and stir for 2 minutes or until thickened. Reduce heat.
4. Stir in cheese until melted.
5. Drain macaroni; add cheese mixture. Cook and stir for 3-4 minutes or until heated through. Add pepper to taste.

This looks so yummy! I just ate dinner but now I want some macaroni! I'm traveling to New York City at the end of this month. Where should I go eat gluten free?

Hello!

Well if you're still craving macaroni when you get there you MUST go to SMAC! It's a macaroni and cheese eatery and they offer all different variations of gluten free macaroni, it's soo delicious. It's in a cute little neighborhood in the East Village.

I also really loved Peter's on the upper west side. Their menu was pages and pages long and they offer breakfast, lunch and dinner. Bloom's was also great, I really enjoyed getting a burger WITH a bun! All these places are spread out, so I'm not sure where you are staying in the city, but I think they are worth going to.

I've heard great things about Mozzarelli's for Italian. I went to Risotteria when I was there and wasn't terribly impressed. It was also really tiny so we had a super long wait!

I can't wait to go back and try some more gluten-free restaurants ...there are sooo many! I also wanted to try out babycakes the bakery but didn't have time. You must blog your experience!

A great website to go to is www.yelp.com, if you type in gluten free manhattan you will find a list of restaurants with lots of reviews! This helped me in my decision making when I went there.

I think we're staying near Central Park but we're going to see Regina Spektor in Little Italy one night.
I think I would trek across the entire city for almost any good gluten free experience.
My little coastal town offers NOTHING in the way of dining out. I'm so excited!!

Katie- this was sooooo delicious! My husband went on and on about it. I did 2 things different. 1 I only had 2/3 cup of half and half, so the remainder I used heavy cream (so fattening!) and then I had mixed it all in my cast iron skillet, so I sprinkled with cheddar and put in the oven until melted. So yummy! Keep those good, EASY (I have 4 children) recipes coming!

I'm so glad you liked it! Your changes sound delicious, I love when mac and cheese gets golden brown from the oven!

Did you ever try the chocolate chip cookies? How did they turn out?
