This recipe is delicious...I left out all the vegetables because I'm super picky but feel free to add all sorts of vegetable goodness!Ingredients:Filling:1 lb. sirloin tips1 Tbsp of shortening or butter3 cups of GF beef broth (I use Pacific Natural Foods beef broth)1/2 tsp. salt1/8 tsp. pepper1 bay leaf2 Tbsp GF flour or corn starch1 small onionTopping:4 large potatoes2 Tbsp buttermilk or heavy creamDirections:Filling:1. Coat the sirloin tips in GF flour, salt and pepper.2. Brown sirloin tips on medium heat in a 12 inch skillet. Chop onion and add. 3. Add 3 cups GF beef broth and bring to a boil. Reduce heat, cover and simmer until beef is tender. Topping:1. Peel, cube and boil potatoes for 15-20 minutes.2. Drain water and add butter.3. Mash and add milk until desired consistency.Combine:1. Pour stew into a medium sized casserole dish and cover with mashed potatoes.2. Broil until potatoes begin to brown.
